Lobster West May Open in Encinitas as Early as June

The restaurant will have lobster delivered overnight from Maine and will feature produce from local farms.

Lobster lovers may be able to experience the East Coast without leaving Encinitas as early as mid-June.

That's when Lobster West is scheduled to open at Subway's former location at 765 S. Coast Hwy., owner Kim Locker said.

She and her husband, Joel, moved from New York six years ago and they love everything about Encinitas from the healthy living to the sense of community, she said.

"The only thing missing was Maine lobster rolls by the beach," she stated.

Locker told Patch the East Coast food will have some Encinitas flair:

"We will feature lobster rolls with fresh Maine lobster, that we will overnight to guarantee it's freshness.  Our rolls are not laden with mayo or celery or filler, just fresh seafood and drawn butter and lemon.  We will also have crab and shrimp rolls, organic salads, and delicious chowders. We will offer a gluten free roll and our salads will be filled with vegetables from local farms."
