Switching to gluten-free doesn’t have to mean sacrificing satisfying dessert cravings anymore. Jennie Parker of Pop Culture Desserts is an accomplished master at whipping up gluten-free decadence. Her mouthwatering creations include Chocolate Flourless Cake Bites, Oatmeal Chocolate Chip Peanut Butter Cookies and Coconut Macaroon Pops.

Gluten-Free Flourless Chocolate Cake

Ingredients
1 lb butter
2 lbs 4 oz chocolate
24 yolks
4 eggs
8 oz of sugar
Directions
Mix together with a whisk by hand in a bowl. Melt 2 pounds 4 oz of chocolate (Hershey’s or Ghirardelli chips work well) with 1 pound of butter in the microwave. Stir every 30 seconds until melted. Mix the eggs and sugar in a separate bowl.
Then simply mix the chocolate-butter mixture into the egg-sugar mixture by hand. Whisk until combined. The batter will slightly thicken. Use a spoon or scoop and fill a cake mold 3/4 of the way. Bake on 350 (high fan if you have a convection oven…. if not that is fine too). Bake until the edges are firm and the middle is mostly cooked.
